Royal pancakes: this is how Máxima prefers to eat them

Although royals often enjoy an appetizing plate of five, they also enjoy a tasty snack from time to time. For example, Máxima is known to love the deliciously sweet panqueque y dulce de leche from her home country Argentina. A nice Sunday morning is of course the perfect time to share the sweet recipe again.

Máxima’s favorite snacks

Before we share the recipe with you, we are curious to know what other snacks our queen loves. The Argentinian dessert is one of the dishes that Máxima likes to eat in between, but she also holds the traditional Dutch croquette and bitterbal in high regard. She also seems to like to gulp down a bowl of ice cream.

Máxima often keeps her meals healthy with lots of vegetables and fish, but every now and then the highness also strikes. And then? Then Máxima chooses this Argentinian sweet.

Ingredients

For the dulce de leche:

  • Can of condensed milk (Friesche Vlag)

For the panqueques:

  • 125 grams of flour
  • 3 eggs, lightly beaten
  • 160 milliliters of whole milk
  • 160 milliliters of water
  • 1/4 teaspoon salt
  • 3 tablespoons butter, melted + extra for greasing
  • Icing sugar, for garnish (optional)

This is how you make the panqueque y dulce de leche:

  1. First make the dulce de leche, the milk cream. To do this, remove the label from the can of condensed milk. Place the tin in a pan with plenty of water and make sure it is completely covered.
  2. Bring the water to a boil and let the can boil for 3 hours. Keep a close eye on this process: the can needs to be constantly submerged, so add extra water if necessary.
  3. Let the can cool completely – the dulce de leche is ready.
  4. Make the pancakes. Mix the flour, milk, water, eggs and a pinch of salt.
  5. Then add the melted butter to the pancake batter and stir until just combined: Stirring too long will make the pancakes rubbery.
  6. Cover the bowl and place the batter in the refrigerator for at least 1 hour.
  7. Heat a knob of butter in a pancake pan over medium heat. If necessary, grease the pan well with a pastry brush.
  8. Pour 1/4 of the pancake batter into the pan, swirl to create an even pancake. Let both sides turn light brown. Repeat with the rest of the batter until you have four pancakes.
  9. Divide the dulce de leche from the can over the pancakes. Then fold the pancakes into quarters and sprinkle with icing sugar.
