Turkish Lentil soup

Oh, have you ever been to Turkey and eaten ‘Lentil soup’ there? This vegetarian soup is, in a word, delicious! The green soup, even though it was more than 25 years ago, has always stayed with me. Lentil = lentils. In this case it is a pureed green lentil soup. The lentil soup contains green lentils, but also onion, carrot, celery, olive oil, herbs such as cumin, coriander, turmeric, paprika and 1 liter of vegetable stock. Just finely chop, cook and puree.

American vegan burger

Vegan burger Californian style, that is the American vegan burger. Buy vegan hamburger buns and toast them briefly. Buy vegan cheese, vegan bacon and vegan burgers. You also add delicious crispy iceberg lettuce (cut wafer-thin), slices of red onion, regular onion, slices of tomato and alfalfa. You fry the vegan burger, vegan bacon and onion nicely, place the burger in a bed of iceberg lettuce, use some soft mustard and tomato ketchup and stack the other ingredients on the burger, with the fried onions as a topping!

Japanese Poké Bowl

Poké Bowls are really delicious and extremely popular. The bowl consists of a round container from which food is eaten. First cook sushi rice, this forms the base of the container and takes up approximately half of the container. Add deliciously healthy ingredients such as: Edamame beans and Wakame seaweed salad (a must in Japanese cuisine), but also small cubes of cucumber, avocado, fried tofu cubes and spring onion. Group the ingredients sort by type and round it off with a topping of sesame seeds and soy sauce.

French vegan mushroom soup

Make a delicious thick soup from vegetable stock, mixed with flour to thicken the soup, olive oil, in which you fry a mixture of different mushrooms. So fry the mushrooms in some olive oil with a small dash of soy sauce (for flavor). The aroma of the mushrooms is released during baking. Add spring onion and garlic to the soup, but do not fry them. Then add the fried mushrooms with oil to the soup and enjoy!

You see, preparing vegan recipes is easier than it seems and oh so fresh and nutritious. Meat substitutes such as beans and mushrooms are a nice alternative.
