Do you live alone? 3x tasty recipes for one person

If you live alone, it is sometimes quite difficult to decide what to eat. Many dishes are intended for multiple people, so you often end up with leftovers. That is not convenient because it causes food waste. These are our three favorite recipes to make for one person.

Gochujang tofu bowl

This is the ideal meal for lovers of spicy food! This recipe is quite quick to make and you can easily make more for meal prep. This is what you need for it:

  • 75-100 grams of rice
  • 150 grams of tofu
  • Vegetable of your choice (suggestions: shiitake mushrooms, edamame beans, zucchini)
  • A tablespoon of gochujang
  • Two to three tablespoons of soy sauce
  • A teaspoon of rice vinegar
  • A teaspoon of sesame oil
  • A clove of garlic
  • Garnish of your choice

This is how you make it:

  1. Start by pressing your tofu. The more water you can get out of the tofu, the better. You can press your tofu by placing it on a cutting board with some paper towel wrapped around it. Then place something heavy on it, such as a thick book. Let this sit for ten to thirty minutes to get the water out. Once you have done this you can cut the tofu into cubes.
  2. Cut your vegetables into the desired shape. Also finely chop your garlic.
  3. You can prepare your tofu in different ways. You can do this in the oven, air fryer or pan. If you choose the oven or air fryer, we recommend baking it for twenty minutes at a temperature of 180 degrees Celsius. Toss the cubes regularly so that they brown nicely on all sides. You can also sprinkle a little cornstarch over your tofu to make it extra crispy. Would you rather do it in the pan? Then use a large frying pan and a dash of oil and fry your tofu until the cubes are nice and golden brown on all sides.
  4. In the meantime, cook your rice as indicated on the package.
  5. You can also make your marinade for your tofu right away. Place the gochujang (this is a Korean hot pepper paste) in a bowl together with one or two tablespoons of soy sauce, sesame oil, rice vinegar and garlic. Stir this well. Once the tofu is cooked you can add it to the marinade. Stir everything well so that the tofu is well covered.
  6. Now that the tofu is marinating, you can fry your vegetables.
  7. When your vegetables are done, you can remove them from the pan and, if necessary, put the tofu back in the pan when it has cooled down.
  8. Finally, assemble your bowl by putting your rice, vegetables and tofu together. Finish it off with a garnish of your choice and of course a dash of soy sauce. Our favorite garnishes are fried onions, sesame seeds and/or sriracha mayo.

Falafel wraps with roasted cauliflower

Wraps are super easy and quick to make, and you really want to try these once! This is what you need:

  • Two medium wraps
  • 75 grams of falafel
  • 100 grams of iceberg lettuce
  • A small red onion
  • 150 grams of cauliflower
  • Olive oil
  • Paprika powder
  • Garlic powder
  • Onion powder
  • Chili powder
  • Hummus and/or baba ganoush
  • chili sauce

This is how you make it:

  1. Start by cutting your cauliflower into small florets. Then place the florets in a large bowl and add a tablespoon of olive oil. Toss this well so that all the florets are covered. Then season the cauliflower with the herbs, season to taste. Toss this together again to cover everything. Then roast the cauliflower in the oven or in the air fryer at 180 degrees for 15 to 20 minutes.
  2. Cut the red onion into half rings.
  3. Bake the falafel as indicated on the packaging
  4. Take a frying pan and place it on medium heat, do not add oil to the pan. Then place a wrap in the pan and heat it on both sides. Do this with both wraps.
  5. Once your cauliflower and falafel are ready you can put together the wraps. Start by spreading a tablespoon of hummus or baba ganoush on the wrap. Would you like to use both? Then use half a tablespoon of each. Then place your lettuce and onion on top. Then add your falafel and cauliflower and top it off with a little chili sauce. Fold the wrap and enjoy!

Burritos

We’ll stick to the wraps for our third recipe. But this recipe is really different! This is what you need:

  • One or two large tortillas
  • 100 grams of (vegetarian) minced meat
  • 190 grams of corn
  • 190 grams of kidney beans
  • A small onion
  • An avocado
  • Two tablespoons of crème fraîche
  • Garlic powder
  • Paprika powder
  • Onion powder
  • Salty
  • Cumin powder
  • Grated cheese (can also be vegan cheese)

This is how you make it:

  1. Start by cutting your onion into small pieces. Then fry the onion over medium heat.
  2. Once the onion becomes a little translucent you can add your minced meat. When the minced meat is done, you can drain your cans of corn and kidney beans and then add them. Stir everything together well.
  3. Cut your avocado and mash it with a fork. Add two tablespoons of crème fraîche and a teaspoon of all the herbs (or a little more to taste). Stir this well.
  4. Now you can start putting together the wraps. Start by placing your wrap on a plate and add a layer of the avocado spread. Spread this out but keep the edges of the wrap free.
  5. Sprinkle a layer of cheese over the wrap and place a scoop of your filling in your tortilla. Make sure you don’t overfill it so you can easily fold it closed. Do this for both wraps. Do you have leftover avocado spread? No problem, you can still use this to dip your wraps.
  6. Fold the wraps and place them in a frying pan without oil over medium heat with the folded flap facing down. Fry the burrito until golden brown on both sides and serve!
