3 delicious recipes from Moroccan cuisine

There is delicious food everywhere in the world. Every country has its own delicacies and occasionally it can be very enriching to delve into a different cuisine. Moroccan cuisine, for example, has a lot of delicious things to offer. These are three of our favorite recipes.

Harira soup

A warm soup makes everyone happy, right? This delicious Moroccan harira soup makes us feel warm inside. This Moroccan recipe is completely vegan, except for the garnish. You can leave this out if you want to make the meal plant-based!

What do you need? (For four servings)

  • 3 onions
  • 400 grams of chickpeas
  • 140 grams of tomato puree
  • 4 stalks of celery
  • 4 carrots
  • 3 cloves of garlic
  • 400 grams of lentils
  • 800 grams of diced tomatoes
  • 2 teaspoons Ras el Hanout
  • 2 teaspoons harissa
  • Pepper and salt

This is how you make it

  1. Start by cutting your ingredients. Finely chop your garlic and onions. You can cut the celery and carrot into pieces.
  2. Put a dash of olive oil in a pan and add your chopped ingredients. Fry this for five minutes on low heat.
  3. Add the Ras el Hanout and tomato puree and fry for another three minutes on low heat.
  4. Add the tomato cubes and 150 ml water. Let this cook for 20 minutes on low heat.
  5. Add the harissa and stir it well into the soup. Then add the lentils and chickpeas and leave on the heat until they are warm.
  6. Season the soup with salt and pepper.
  7. You can now serve the soup! You can garnish it with some crumbled feta cheese.

Baghrir (Moroccan pancakes)

Are you looking for a vegan pancake recipe that is perfect for your breakfast? Then try baghrir, or Moroccan pancakes. They are incredibly easy to make, and of course very tasty.

What do you need? (for twenty pancakes)

  • 250 grams of fine semolina
  • 2 sachets of baking powder
  • 150 grams of flour
  • 1 tablespoon yeast
  • 1 teaspoon salt
  • 550 ml lukewarm water
  • 1 packet of vanilla-flavored sugar

This is how you make it

  1. Place all dry ingredients in a bowl and mix well.
  2. Add 250 lukewarm water and mix the batter with a mixer. Then add the same amount of water again and mix again.
  3. Cover the batter with a wet tea towel and let it rise for an hour.
  4. After rising, add another 50 ml of lukewarm water and mix the batter with a spatula.
  5. Heat a non-stick frying pan over medium heat. If you don’t have a non-stick pan, you can use cooking spray.
  6. Pour the batter into the pan and make pancakes that are approximately the same size as American pancakes.
  7. Fry the pancakes on one side until golden brown and until holes appear on the top.
  8. Rinse the pan with cold water between baking the pancakes before adding new batter to the pan. Repeat this process until you run out of batter.
  9. Serve the pancakes with fruit or another sweet topping such as honey.

Moroccan meatballs

A Dutch AVG can sometimes become a bit boring. We certainly don’t want to say that Dutch meatballs are not tasty, but you can also approach it differently. Try these Moroccan meatballs for example!

What do you need?

  • 500 grams of minced meat
  • 1 egg
  • 2 cloves of garlic
  • 3 teaspoons Ras el Hanout
  • A handful of breadcrumbs
  • Salt to taste
  • 1 teaspoon chili powder

This is how you make it

  1. Set your oven to the fan setting and preheat it to 200 degrees. While preheating, place an oven dish with a layer of water at the bottom of the oven. This creates the effect of a steam oven.
  2. With the minced meat with the spices, the egg and your garlic.
  3. Add breadcrumbs until the minced meat feels slightly sticky.
  4. Now roll the minced meat into balls.
  5. Place the balls on a baking tray lined with baking paper and bake for 20 minutes until golden brown
  6. Serve the meatballs on flatbread with a yogurt sauce.
