These are the best dishes to serve for a unique Christmas dinner

Christmas officially starts this weekend. This is the time of year for good food! But what should you make? For those who are still looking for inspiration, we have three delicious recipes that you will definitely want to make for your Christmas dinner.

Roasted tomato and garlic tarte

A tarte is a very simple but super tasty dish. You can make the portions as small or as large as you want and serve it as a main course or as a starter. We absolutely love this variation and it’s perfect for Christmas.

This is what you need (for 6 servings):

  • 500 grams of cherry tomatoes
  • Half a jar of roasted peppers
  • A spring onion
  • Two cloves of garlic
  • A tablespoon of olive oil
  • Salt and pepper
  • 450 grams frozen puff pastry
  • 100 grams grated cheese (or more if you like)

This is how you make it:

  1. Preheat the oven to 200 degrees Celsius.
  2. Chop all the vegetables into small pieces, including the garlic, and combine in a large bowl. Then add the olive oil and salt and pepper. Stir this together so that everything is well mixed.
  3. Roll out your puff pastry on a sheet of baking paper. Make sure that the edges of the puff pastry are slightly more rounded than the rest of the puff pastry. You can do this with a roller. Then place your puff pastry, with baking paper and all, on the baking tray.
  4. Sprinkle the puff pastry with a layer of cheese. Place your vegetable mix on top and make sure that it is evenly distributed over the puff pastry. Finish it off with another layer of cheese.
  5. Place in the oven for 25 to 30 minutes or until the puff pastry is a nice golden brown.

Sweet potato soup with cinnamon

Soup is perfect during Christmas. It gives us warmth and that makes us happy. This sweet potato soup is easy to make and immediately gives us that Christmas feeling.

This is what you need (for 4 servings):

  • Four tablespoons of olive oil
  • Four large carrots
  • A large onion
  • Two cloves of garlic
  • A tablespoon of cinnamon
  • A dash of nutmeg
  • Two sweet potatoes
  • Two tablespoons of stock base (chicken or vegetable)
  • Two bay leaves
  • Two slices of (stale) bread
  • A tablespoon of maple syrup

This is how you make it:

  1. Cut all your vegetables into small pieces. Then heat two tablespoons of oil in a large pan over medium heat. Once the pan is hot, add the carrot, onion and garlic. Stir regularly and let it cook for 8 to 10 minutes. Then add your spices and cook for another minute.
  2. Now add the sweet potato, stock base, bay leaves and add about one and a half liters of water. Stir everything together well. Let your soup simmer until your sweet potato is soft, about 10 to 12 minutes.
  3. While your soup is cooking, toast the two slices of bread in the remaining two tablespoons of olive oil in a frying pan. Once your bread is nice and golden brown, you can remove it from the heat. Pour your maple syrup over this and flip your bread a few times to make sure everything is well covered. Then cut your bread into pieces so that they become croutons.
  4. Return to your soup and fish out the bay leaves. Now take your hand blender and blend the soup until it is nice and smooth. Serve the soup with the homemade croutons.

Smashed potatoes

Potatoes are always good! At Christmas we quite often eat mashed potatoes. But you can also do things a little differently this Christmas with these smashed potatoes.

This is what you need:

  • One kilogram of potatoes with skin
  • Three tablespoons of olive oil
  • A tablespoon of unsalted butter
  • Two cloves of garlic
  • Two teaspoons of fresh thyme
  • Finely chopped parsley to taste

This is how you make it:

  1. Preheat your oven to 230 degrees Celsius. Place your potatoes in a large pot and cover them with water. Add salt to the water and let the potatoes cook until they are done. This takes about 15 to 20 minutes. Once they are done you can drain the water.
  2. Cover your baking tray with baking paper and pour a little olive oil over it. Place your potatoes on the baking tray and gently crush them with the bottom of a glass. Sprinkle the tops of the potatoes with a little olive oil and roast them for 25 minutes.
  3. Melt your butter and add your thyme and garlic. Remove the potatoes from the oven and drizzle them with your butter mix. Put the potatoes back in the oven and let them become golden brown and crispy within 10 minutes. Turn them halfway through. Sprinkle them with salt and parsley before serving.
