Can’t get enough of avocados? Then we have a recipe for you that you should try: avocado lime cheesecake. No, there is nothing misleading about the name. This is really a cheesecake with avocado and lime.
Avocado lime cheesecake
Last week we already came up with chocolate hummus, but now there is another dish that contains an ingredient that you would not initially add to your cheesecake: avocado. The nice thing about this cheesecake is that it is easy to make.
This is what you need for the bottom:
– 10 digestive biscuits
– 65 grams of sugar
– 6 tablespoons melted butter
– A pinch of salt
You need this for the filling
– 400 grams of cream cheese
– 2 ripe avocados, peeled and pitted
– 85 grams of sugar
– Pinch of salt
– 200 milliliters of whipped cream
– 50 milliliters of lime juice
– Shavings of 1 lime
– Lime wedges (for garnish)
This is how you make the crust:
Preheat the oven to 180 degrees and line a cake tin with baking paper.
Crumble the digestive biscuits with a hand blender and then mix in a bowl with the melted butter, sugar and salt. Press the cookie mix into your baking tin and then place it in the oven for about 10 minutes. Then let it come to room temperature.
This is how you make the filling
In a large bowl, beat the cream cheese, sugar and salt until it becomes a fluffy mixture. Then add the avocados and beat until it is a smooth mixture.
Add the whipped cream, lime juice and some of the lime shavings and beat until the mixture gains volume. This takes about 3 minutes.
After this, you can pour the batter into your pie pan, on top of the crust. Let your cake cool in the refrigerator for at least 4 hours. Before serving the cake, you can place the remaining lime shavings and lime wedges on top of the cake.
