Budget recipe for vegetarian pasta (4 persons)
The recipe comes from Selina Food:
- 500 orecchiette pasta
- 2 eggplants
- 500 grams Roma tomatoes
- 100 grams of pine nuts
- 2 burrata
- 40 grams of basil
- 1 can of tomato paste
- 1 tbsp vinegar
- 1 tsp sugar
- 1 tsp chili flakes
- 1/2 tsp salt
- 1 shallot
Preparation of the delicious pasta
1. Preheat the oven to 200 degrees. Poke some holes in the eggplant and cut in half. Brush with olive oil and place in the oven for 40 minutes, turning halfway through. You can also cut the eggplant into slices and then put them in the oven.
2. Fry the shallot in a pan. Cut the tomatoes in half and place in a pan. Add the basil, sugar, vinegar and tomato puree. Let it simmer for 5 minutes.
3. Add the herbs and mix well.
4. Remove the eggplant from the oven. You can choose to remove the outer skin or leave it on.
5. Add the eggplant to the sauce.
6. Meanwhile, cook the pasta in some salted water. When it is ready, keep 1 glass of pasta water aside. You add this to the sauce.
7. Also add the pasta to the sauce.
8. Finish with burrata, basil and pine nuts.
