3 simple recipes for busy working days

You probably recognize it. You’ve had a busy day at work and you still have to cook. How are we going to do this? Fortunately, we have a few easy recipes for you. Enjoy the meal!

Simple recipes for busy working days

Recipe 1: Fish burger

Do you love fish as much as we do? Then this recipe with a fish burger is really something for you. It is an original and especially fresh twist on the classic hamburger. We use cod fillet and smoked salmon. We serve this on a sandwich with creamy avocado and fresh crispy vegetables. Oh yes, and don’t forget the sun-dried tomato tapenade. It is easy to prepare and very nutritious.

This is what you need for four people:

  • 4 hamburger buns
  • 400 g cod fillet
  • 100 grams smoked salmon
  • 2 slices of casino white
  • 1 egg
  • 4 tbsp sun-dried tomato tapenade
  • 0.5 cucumber
  • 1 little gem lettuce
  • 4 avocados
  • 4 tsp capers
  • 8 tbsp cocktail sauce
  • Olive oil
  • Pepper and salt

Preparation method:

  1. It’s time to make this dish. Chop the cod fillet into coarse pieces and cut off the crusts from the bread. You then chop this coarsely. Together with the cod fillet and the egg, chop it finely in a food processor. Then add the sun-dried tomato tapenade and 0.25 teaspoon salt and mix well.
  2. Knead this mixture into 4 flat disks and let them stiffen in the refrigerator until you are ready to use them.
  3. Then cut the hamburger buns in half and toast them on the side in a dry and hot frying pan until they are light brown.
  4. Cut cucumber into thin slices and halve the avocados. Remove the pit and scoop out all the pulp. Mash the avocado and capers and season with salt and pepper.
  5. You can fry the fish burgers for about 8-10 minutes in one pass with a dash of olive oil.
  6. Now it’s time to spread the sandwich with the avocado mixture. Place the burgers on the buns and divide the lettuce, cucumber and smoked salmon over the burgers. Top this with 2 tablespoons of cocktail sauce and place on top of the burger and secure with a skewer. Time to eat!

Recipe 2: Enchiladas with minced meat

Do you fancy a tasty dish that is quickly on the table? Then try this recipe with enchiladas and minced meat. Filled with savory minced meat, beans and herbs. Delicious with a sauce of tomatoes, Texmex herbs and onion. A little cheddar cheese and you can enjoy it. Bring on this recipe.

This is what you need for four people:

  • 4 tortillas
  • 500 g mixed minced meat (possibly vegetarian)
  • 1 red onion
  • 2 spring onions
  • 4 sprigs of coriander
  • 2 limes
  • 300 g bean mix
  • 1 can of tomatoes
  • 150 ml passata
  • 1 tbsp tomato puree
  • 200 g grated cheddar cheese
  • 125 ml sour cream
  • 2 tbsp texmex spices
  • (Sunflower oil
  • Pepper and salt

Preparation method:

  1. Preheat the oven to 200 degrees (top and bottom heat) or 180 degrees (fan).
  2. Put a dash of (sunflower) oil in a large frying pan. Then add the minced meat and fry for about 5 minutes. Now stir 0.5 tablespoon of Texmex spices and the tomato puree into the minced meat and fry for 2-3 minutes.
  3. Rinse the beans and let them drain. Add 90 ml of passata and bean mix to the minced meat and stir. Season this with salt and pepper if necessary. Now fill the tortillas with it and roll them up. Place them in the baking dish.
  4. Now make the sauce for the enchiladas. First clean the frying pan. Remove the peel from the red onion and chop it finely. Now heat a dash of oil in the frying pan again. Fry the onion over low heat for 3-4 minutes. Make sure the onion turns light brown. Add the canned tomatoes and 60 ml of passata and stir in the tablespoon of Texmex herbs. Cook this into a thick sauce.
  5. Now spoon the sauce over the rolled tortillas and sprinkle generously with the grated cheddar. Place this in the oven and let the enchiladas heat up and let the cheese melt for 20 minutes.
  6. For the sauce, mix sour cream with 0.5 tablespoon of Texmex spices, 2 tablespoons of oil and 1 tablespoon of water. Squeeze the limes and stir into a smooth, thin sauce. Cut the onions into thin rings and chop the coriander finely. Remove the enchiladas with minced meat from the oven, sprinkle with spring onions and coriander and zigzag the sauce over them.

Recipe 3: Pita gyros with tzatziki sauce and pickled red onion

Today we eat Greek! Delicious pita with gyros and pickled red onion. We finish this recipe with a fresh tzatziki sauce. Juicy pork tenderloin chops with lots of gyros spices, served with radish, tomato and cucumber. Is this recipe already making your mouth water?

This is what you need for four people:

  • 600 g pork chops (or view our vegetarian tip at the top of this article)
  • 4 pita breads
  • 1 cucumber
  • 2 tomatoes
  • 4 radishes
  • 1 large red onion
  • 6 cloves of garlic
  • 100 grams of crème fraîche
  • knob of butter
  • 1 tbsp mayonnaise
  • 2 tbsp gyros herbs
  • 6 tbsp red wine vinegar
  • Olive oil
  • Pepper and salt

Preparation method:

  1. We start by cutting red onion into rings. Then place it in a bowl and pour some red vinegar over it. Let this stand for 20 minutes.
  2. Then sprinkle the pita breads with water and bake them in a preheated oven at 220 degrees. Do this for about 4-6 minutes. You can also toast the sandwiches in a toaster.
  3. Now it’s time to make the tzatziki sauce. To do this, halve the cucumber lengthwise and scrape out the seeds with a teaspoon. Then grate the cucumber on a coarse block grater or with a food processor. Mix the cucumber zest with the crème fraîche and mayonnaise. Squeeze the garlic over the top. Mix everything well and season with salt and pepper. If you want a smooth sauce, use the hand blender.
  4. Then cut the pork from the bone and then into strips. Sprinkle it with salt and gyros spices. Heat some olive oil with butter in a frying pan. Fry the meat strips for 5 minutes until golden brown.
  5. Cut the tomato and radish into slices and fill the rolls with sauce, meat, tomato. Add the radish and pickled red onion.
