What is kombucha?

A fermented tea that originally comes from the Far East. It has been drunk there for centuries because of its health benefits. The drink is made from black or green tea in combination with sugar and/or fruit juice. Finally, ‘SCOBY’ is added, which is a special kombucha fungus. This is a symbolic culture of bacteria and yeast and together they form a fine tissue. It’s actually a kind of organism in itself. It produces all kinds of substances such as carbon dioxide, but also needs nutrition. This food is in the form of sugar. The kombucha fungus ‘eats’ the added sugars, so to speak, so that it can grow. Of the amount of sugar added in the beginning, very little remains in the end.
